A stump left in the ground is not a neutral thing. It sprouts back, it catches mower decks, it holds water, and depending on the species it will sit there for years slowly rotting while you mow around it.
Grinding takes the stump and the surface roots down below grade so the spot stops being a feature of the yard. Done properly, the area gets backfilled and you can sod it, plant it, or just let the surrounding turf run across it.

Why a stump left here does not just quietly rot away

Stump Grinding questions
How deep do you grind?
Below grade rather than flush, and far enough down that the area can be backfilled and planted or sodded over. Flush grinding just hides the problem at the surface.
Can I plant grass over it straight away?
Once it is backfilled, yes in most cases. Grindings are woody and can be slow for new turf, so where you want sod over it we will talk about what needs to come out or be topped first.
Do you grind the roots as well?
The surface roots running off the stump, yes. Those are what catch mowers and throw up new growth. Deep roots are left to break down on their own, which they do without causing problems.
Can you do the stump at the same visit as the removal?
Usually, and plenty of people do it that way so the yard is finished in one go rather than living with a stump until a second visit.
